Made the classic way
In the cellar beneath the hotel
The Spätburgunder is fermented on the mash and matures in old wooden casks. Alongside: Weißherbst, the house’s own Sekt and a Riesling brandy. The 2026 harvest is in.
Above the bend of the Rhine at AssmannshausenSpätburgunder and Riesling from Assmannshausen, since 1752.
The Schön family has been making wine in Assmannshausen since 1752. Around five hectares of vineyards belong to it, in Assmannshausen and Rüdesheim, many of them steep slopes above the Rhine. The family tends part of them itself; the rest is leased out.
The wines are pressed in the cellar beneath the hotel. Since July 2026 Wiebke and Robin have run the hotel, while the Weinhaus remains with Karl Schön – and his wines stay in the house.
Steep south-facing slopes at the bend of the Rhine, among the warmest in the Rheingau.
AssmannshausenSpätburgunder
A red-wine island in Riesling country: Spätburgunder from the Höllenberg is among Germany’s best-known red wines.
RüdesheimRiesling & Weißburgunder
Fresh and clear, with fine acidity and plenty of fruit – Rieslings that age beautifully for years.
